3 Quick Chicken Recipes

Chicken nuggets, chicken drumsticks, chicken fingers… These recipes are easily prepared and can be cooked in many different ways! But if you want to prepare something new and a little more unique, try these quick chicken recipes that you will love!

Maple-Baked Chicken Breasts

What you need:

  • 3/4 kg. boneless, skinless chicken
  • 1/2 cup maple syrup
  • 1/2 cup Dijon mustard
  • 2 tablespoons soy sauce (less sodium)
  • 2 sprigs of fresh thyme
  • 2 sprigs of fresh rosemary
  • Salt to taste
  • Ground black pepper to taste

Spray an 11×7 inch baking dish with cooking spray and place chicken inside. Sprinkle or rub salt and pepper on chicken to taste. Combine maple syrup, Dijon mustard and soy sauce in a small bowl.Pour mixture over chicken and toss to coat the meat well. Tuck rosemary and thyme sprigs alongside the chicken. Bake in a preheated oven (425F) for 30 to 40 mins.

Remove herbs and discard. Spoon sauce over chicken before serving!

The Ultimate Cheesy Chicken Nuggets

What you need:

  • 1/2 kg. frozen chicken nuggets (use dino chicken nuggets for added fun!)
  • 2 cups shredded mozzarella
  • 1 cup pizza sauce
  • A pinch of salt
  • Freshly ground black pepper
  • Chopped fresh basil, for garnishing

Arrange frozen chicken nuggets in a baking dish. Spoon pizza sauce over nuggets and season with salt and ground black pepper. Cover with mozzarella. Bake in a preheated oven (400F) for 25 to 30 mins or until nuggets are cooked through.

Remove from oven and allow to cool for a few minutes. Garnish with fresh basil before serving.

Easy Cheese and Chicken Sloppy Joes

What you need:

  • 3/4 ground chicken
  • 1 kg. cloves garlic, minced
  • 1 large onion, diced
  • 2 cups shredded mozzarella
  • 1 cup ketchup
  • 1/3 cup brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon chilli powder (optional)
  • 2 teaspoons Worcestershire sauce
  • Kosher salt and ground black pepper to taste
  • 4 buns, for serving

Heat oil in a large pan over medium heat then cook onion until tender. Add garlic and cook for 1 minute more. Stir in ground chicken and cook for 6 more minutes or until no longer pink.Add ketchup, brown sugar, mustard, chilli powder (if using) and Worcestershire sauce to the pan. Season with salt and pepper. Stir ingredients until well combined. Simmer for 5 minutes or until the mixture is thick and saucy.

Top with mozzarella and place cover for 2 minutes. Remove from heat and cool for a few minutes. Serve on buns.
