Gluten-Free Chicken and Potato Combo

What you need:

  • 1 bottle (12 oz) beer or root beer, at room temperature
  • 6 pcs. chicken drumsticks
  • 2 potatoes
  • 2 cloves garlic, smashed
  • 1/2 cup butter, melted then cooled
  • 1 tablespoon brown sugar
  • 1 tablespoon chilli powder
  • 2 teaspoons salt, plus more to taste
  • Lime wedges, for wedges
  • Olive oil, for drizzling

Mix together the beer, garlic, butter, brown sugar, chilli powder and salt in a large re-sealable plastic bag. Shake to combine the ingredients well. Add the drumsticks to the bag, shake to coat with mixture and seal. Set aside to marinate.

Microwave the potatoes on high for 5 minutes or until slightly softened. Or, instead of a microwave, you may cook it in an oven or boil it.  When ready, slice into 1/4-inch thick pieces lengthwise. Drizzle both sides of each potato slice with olive oil.

Place the marinated chicken and the potatoes on a preheated grill. Cook drumsticks until cooked through, about 20-25 mins, brushing with beer marinade occasionally. Grill the potatoes for 3 mins per side.

When cooked, transfer the chicken and potatoes to a serving plate. Sprinkle with salt and serve with lime wedges.

  • 1 tablespoon olive oil
  • 1 1/2 teaspoons dried thyme leaves

  • 1 teaspoon ground cumin

Brush onion slices with remaining oil. Place steak and onions on a grill pan and cook, covered, on a pre-heated grill over medium-high heat for 12 mins, or until desired doneness on the steak is achieved.
